There Is No Cure for Veggie Fries -- this is more than just St. Patrick's

We are in a veggie fries frenzy. It started as we were experimenting with a healthy version of 50/50 fries a while back. The dish itself was simple -- oven baked fries consisting of 50% of potato and 50% of sweet potato. We would eat a whole tray during dinner, and another tray afterwards while watching certain Netflix shows.

It took 5 minutes to prepare but the enjoyment lasted hours. Eventually we asked ourselves, is potato & sweet potato really the limit? Of course not! We have had great success with carrot sticks, kale chips, asparagus, and many many more.


 Here is a snap shot of a version for St Patrick's Day. Did you notice the color semblance between the dish and the Irish flag?
All it took was to cut up the potatoes, carrots and asparagus into 2 inch long sticks. Toss with plenty extra virgin olive oil; season with salt and freshly ground pepper.

 It looked beautiful already.

Next, roast in a pre-heated oven at 350 degrees, for 45 minutes.


Irish Flag Fries 
serves 6
  • 2 large russet potatoes
  • 2 large carrots
  • 1/2 lb green beans
  • pinch of salt and freshly ground pepper
  • 2 Tbsp olive oil
  1. Pre-heat the oven to 350 degrees. Cut up the potatoes, the carrots and asparagus into 2 inch long sticks
  2. Coat the vegetables with olive oil, season with salt and pepper.
  3. Roast the vegetables in the preheated oven for about 45 minutes.
When it turns out right, the vegetables are just slightly crunchy and very fragrant. To me, the combination of flavor and crunchiness is just simply irresistible. If you can stop yourself from eating more than 5 servings, please email me and tell me how!

Cost:
As you may already know too well, staples like potatoes and carrots are very affordable. I recently got 8 potatoes for $2 and 4 organic carrots for $1. The green beans we got were also at about $2/lb. The organic extra virgin olive oil was also minimum considering only 2 Tbsp was used. The cost of the total dish comes to no more than $2, which is less than 40 cents/ serving!
