Soy Ginger Marinated Salmon -- I want this every day

To put everything in context, I just got back from a fancy 3-course from the top French restaurant in town, that's been rated "excellent" by New York times, and I'm still salivating when writing this post.

As always, the main dish itself was easy enough to prepare. You need a piece of very fresh salmon. I was browsing in the Asian grocery and saw the WHOLE fish, and just simply could NOT resist purchasing 2 pounds, even though I had no idea whether it is wild-caught and that it is more expensive than the regular Stop & Shop.

It just looked too good to pass.
Skin on, bone in, as raw as it can be -- just how I like it!

Please forgive the picture quality, as it was quite late when we ate (and that I am still living with iphones instead of a fancy DSLR as a poor graduate student...)

Nonetheless, the dinner was quite delicious. We splurged on a bottle of wine per recommendation of the Wine Thief -- the owner of the vineyard has an Asian wife and his wine is known for paring with Asian flavors. I had never thought a floral gewürztraminer would pair so well with a flavorful dish!

There was one more step from a salmon steak and salmon fillets -- filleting...which I kindda had to do with a steak knife (we are not all moved in yet). Well, it was done, not elegantly, but done.

After having those lovely salmon fillets, one should pour them with an awesome marinade and lots of love.
Let it sit for 15 minutes or so when you heat up the oven to 400 degrees.

Once the oven is ready, stick the salmon in and bake for 10 minutes. You are likely to get something like this:

Put it on your plate with a side of salad, pour yourself a glass of wine,  and enjoy!

Soy Ginger Marinated Salmon
serves 4
  • 1.5 lb salmon steak (or 4 salmon fillets)
  • 3/4 cup soy sauce
  • 1/4 Shaoxing wine (or mirin or sake)
  • 4 garlic cloves
  • 2 tsp grated ginger
  • 1 tsp crushed dry red pepper
  • 2 Tbsp brown sugar
  1. Preheat the oven to 400 degrees. If using a salmon steak, cut into four pieces. Combine all other ingredients to from a marinade, and marinade the salmon fillets for at least 15 minutes. (Preferably in the fridge for an hour or so.)
  2. Meanwhile, line a baking dish with aluminum foil. Spray some olive oil to coat. When the fillets are ready, lay them skin side down on the baking dish. Sprinkle with salt and freshly ground pepper. Pour the maridate on top.
  3. Bake the salmon for about 10 minutes. Serve with a green salad with your favorite dressing (we chose gorgonzola pear). Pour yourself a glass of Gewürztraminer or a simple chardonnay, and enjoy.
Cost:
The really fresh salmon was $7.00/lb, putting our entire dish to $3/serving without the salad. Recently I ate out and got a salad with a TINY piece of plain grilled salmon for $14.50. Of course it was much more economical to make it at home!
