Eggless Avocado Coconut Muffins -- Jump Start Your Day

I am back!

Many things have happened, but my love for cooking remains constant -- or maybe even more?

I'm coming back with another baked goods with two of my favorite ingredients -- avocado and coconut! Full of good fat, these muffins would be a power house to fuel up your day :)
Can you guess what's in the muffins?


I'm lucky to have such supportive friends as M, S, C and N -- and I wanted to thank S for hosting me last week, and here's my thank you muffins :)

(Eggless) Avocado Coconut Muffins

  • butter, 1 stick
  • sugar, 2/3 cup
  • organic self-rising flour, 1 cup
  • baking soda, 1 tsp
  • mashed avocado, 1 large
  • organic chia seeds, 1 Tbsp
  • greek yogurt, 1/4 cup
  • coconut milk, 1/4 cup (I used homemade but any will do)
  • vanilla extract, 1/2 tsp
  • coconut extract, 1/4 tsp
  • rolled oats, 1/2 cup
  • salt, 1/2 tsp
  • shredded coconut, 1/4 cup
  • sunflower seeds, 1/4 cup
  • toasted sesame seeds, 1/4 cup
  1. Pre-heat the oven to 350F (175C).
  2. In a medium bowl, melt the butter and sugar in the microwave for about 45 seconds and mix together. Add in the milk and yogurt, and mix in the vanilla and coconut extract. Add in the mashed avocado. 
  3. In a separate bowl, sift all the dry ingredients together (except for the shredded coconut and the seeds).
  4. Combine the wet and dry ingredients, fold in the coconut and the seeds. (you can add in some chocolate chips and others if you wish)
  5. Bake in the preheated oven for 20 - 25 minutes, or until the inserted toothpick comes out dry.



Verdict? Out of the two tasters (S and M), both said they'd save some for their significant others! Try it today and you won't regret!
