Heart Warming Chicken "Noodle" Soup with Spaghetti Squash -- for ONE, on a rainy day

As if things can't get worse, I got a cold, with a bloody nose. The rain outside did not help lightening my mood, either. Sigh. I had to do something to cheer myself up. My lunch did the trick -- it was so comforting that it may have cured my cold!


Chicken "Noodle" Soup with Spaghetti Squash
serves 1
  • 3 oz leftover chicken meat (shredded, from this or this)
  • 1 medium carrot, chopped
  • 1 celery stalk, chopped
  • 1/4 medium onion, sliced
  • 1 Tbsp cilantro, chopped
  • 1 tsp ginger root, diced
  • 1/2 cup leftover spaghetti squash
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 tsp paprika
  • 2 cups chicken stock
  1. Put everything, except the cilantro, in a pot, and bbring to a simmer. 
  2. Let the soup cook for at least five minutes, sprinkle with cilantro and enjoy!
Nutrition:
Each serving provides you with 425 calories, consisting of 39 grams of protein and 5 grams of dietary fiber. It provides you with 218% DVA of vitamin A, 19% DVA of iron, is a good source of Vitamin B6 and Selenium. (More details can be found here.)

Cost:

Starting from a whole bird, the shredded chicken will run you about $1.00 dollars. The spaghetti squash was a good deal, and each serving cost about $0.75. The entire lunch cost me about $2.75.
