As if things can't get worse, I got a cold, with a bloody nose. The rain outside did not help lightening my mood, either. Sigh. I had to do something to cheer myself up. My lunch did the trick -- it was so comforting that it may have cured my cold!
Starting from a whole bird, the shredded chicken will run you about $1.00 dollars. The spaghetti squash was a good deal, and each serving cost about $0.75. The entire lunch cost me about $2.75.
Chicken "Noodle" Soup with Spaghetti Squash
serves 1
- 3 oz leftover chicken meat (shredded, from this or this)
- 1 medium carrot, chopped
- 1 celery stalk, chopped
- 1/4 medium onion, sliced
- 1 Tbsp cilantro, chopped
- 1 tsp ginger root, diced
- 1/2 cup leftover spaghetti squash
- 1 tsp salt
- 1 tsp pepper
- 1/4 tsp paprika
- 2 cups chicken stock
- Put everything, except the cilantro, in a pot, and bbring to a simmer.
- Let the soup cook for at least five minutes, sprinkle with cilantro and enjoy!
Nutrition:
