Healthy Crispy Beef Sliders with Homemade Buns -- perfect for a summer picnic

I love everything that summer brings us -- the sun, the beach, music festivals, county fairs, vineyard trips, fruit picking, and picnics! The ladies from D's family is going to have a girls' night out tomorrow with some great poetry and delicious food. I have been so excited that I started the food preparation way far in advance.

In my opinion, no social gathering shall be complete without some good bread and cheese, and of course we need to make our own bread. 3 days before the event, I had to drag D for some groceries, most importantly -- flour. Between the D&D sessions and Game of Thrones parties, we ran through a whole 5 pound of flour within a week. Record usage within one day: three loaves of crusty bread + home-made pasta + Arya's lemon cake = 12 cups of flour/day! We also hulled home six packs of cheese, some greek yogurt, crab sticks, ground beef, and the regular salad stuff. I became immediately happy 5 hours after the grocery trip, because of these cute slider buns came out lovely.

The bite-sized buns are so versatile! I made some 100-calorie-breakfast sliders (bacon, scrabbled eggs & pepper jack cheese) first, and some crab salad sliders later for lunch. Tomorrow evening, we are going to have some crunchy beef sliders for dinner appetizers.



Healthy Crispy Beef Sliders

serves 5
  • 1/2 lb ground beef
  • 2 Tbsp cornmeal
  • 1 Tbsp chopped scallion
  • 1 tsp chopped parsley
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1/2 tsp garlic powder
  • 5 spinach leaves
  • slices of onion
  • 5 slider buns (try homemade ones if you can, you won't regret!)
  1. In a bowl, mix the first 7 ingredients together. Flatten the mixture on a cutting board, and use a biscuit cutter to cut out 2-inch patties. (Alternatively, you can form meatballs and flatten them by gently pressing them down.)
  2. Heat up a non-stick skillet on medium high. Carefully place the patties in. Cook for 4-5 minutes on each side.
  3. Assemble the sliders: cut the buns horizontally first; place a spinach leaf, followed by a crispy beef patty and some onion slices. You can add a slice of tomato, lettuce, avocado and other fix-ins! Remember to use a tooth-pick to secure the sliders. Enjoy!

Cost:
About $0.75/slider. Everything was from the co-op, where the meat and produce are usually high quality but a bit more expensive than the generic grocery store. I am actually in love with their bulk bin selection that I am considering a membership. Either way, this is much more affordable than the sliders from a tapas place. The more the merrier!
