I am so happy that we got to have our ladies night last Thursday. S must be the best guest ever -- not only does she always show up with a bottle or two of delicious wine, but she was also a great and talented help in the kitchen.
That night, we had oven-baked cajun meatballs, quinoa loaf with green peas, stove-top popcorns, and home-made macaroons. Couldn't have made the dinner without her!
In our past gatherings, we have enjoyed some vietnamese spring rolls and turkey meatball. It goes without saying that meatballs can just hit it right for both of us. I'm going to share with you a tasty and simple meatball recipe here. Sarah helped with shaping them. Really, it took no-effort to make, and it was gone in a split second!
Oven Baked Cajun Meatballs
serves 2
- 3/4 lb ground beef
- 1/4 lb ground pork
- 2 Tbsp corn meal (or bread crumbs)
- 1 Tbsp cajun seasoning
- 1 tsp chopped parsley
- 1 tsp chopped cilantro
- Mix everything together to form 1 inch meatballs. Bake in a preheated oven at 350 degrees for 30 minutes.
Nutrition:
Each serving contains 337 calories. It is a good source of Niacin, Vitamin B6, Vitamin B12, Phosphorus, Zinc and Selenium, and a very good source of Protein.
Cost:
The beef was $3.49/lb and the pork $2.99/lb, bringing the cost per serving down to less than $1.7 per serving. Thanks to the low cost of the main dish, we were able to enjoy plenty of side dishes and wine. Great time!
